Eating seasonally is easy
and enjoyable in the spring and summer months, when garden vegetables abound
and the orchard trees and bushes are heavy with ripe fruit. However, while things look a little
more bleak in the winter, you still have some delicious choices to carry you
through to the warmer months.
Kale – this king of the
vegetables is not only chock-full of vitamins and minerals, it is also
delicious when sautéed with garlic and onion, or eaten raw in a salad.

Cauliflower – a cousin of
cabbage, broccoli, and collard greens (all of which are also winter veggies),
cauliflower takes on a delicious nutty taste when doused in browned
butter. It can also take the place
of mashed potatoes on the table, in a dish that even the pickiest eater would
not turn down. Just mash or blend
the cauliflower together with some butter and garlic. If your clinician allows it, you can even add some Greek
yogurt to make it creamier. Yum!
Pears – one of the few
winter fruits in this region, pears are delicious when eaten alone, or when
used in recipes. Try them sliced
up in a salad with spinach and onion, or roasted in the oven with butter,
vanilla, and honey. Either way,
don’t neglect this delicious winter fruit!
Sweet Potatoes – this tuber is the ultimate winter
comfort food. High in vitamin A
and beta-carotene, sweet potatoes contain twice as much fiber as other
potatoes, which means their caloric energy is used more slowly and efficiently.
Plus, it doesn’t hurt that they
are quite tasty when baked and eaten with butter, cinnamon, and pecans!
